Sycamore and Slow Food Katy Trail Whole-Hog Dinner
Sycamore and Slow Food Katy Trail invite you to a fabulous pork feast that will delight all your senses and cast a warm, delicious spell on a cold Missouri mid-winter's evening.
Sycamore chef/owner Mike Odette will prepare a nine-course whole-hog dinner using heritage Berkshire pork from Newman Farm in Myrtle, Missouri. Please go to Slow Food Katy Trail's blog site (http://slowfoodkatytrail.blogspot.com/) to see the wonderful menu he has created for that evening.
Odette, who first was introduced to Newman Farm pork when cooking for Slow Food Katy Trail's "Dinner in the Vineyard" in June, says it tastes the way pork used to taste a long time ago. "It's so flavorful that I hardly need to season it."
According to Patrick Martins, founder of Slow Food USA and more recently, Heritage Foods USA (an independent company that connects some of the finest restaurants in the country with small breeders of non commodity meats), Berkshire pork is elegant, luscious and smooth.
"Newman Farm pork is the best pork in the USA," says Martins. "By respecting nature's way and allowing the pigs to range freely, and because they are fed nothing artificial, the pigs acquire excellent marbling that this country's greatest chefs swear by.
"The streaks of fat that run through Berkshire meat give it a round and buttery flavor that melts on the tongue," he says. "The firm and substantial texture of Berkshire meat was so cherished by the British monarchy that they exported the breed all over the world, including Japan, where it is called Korobuta."
