Hog Island Oyster Co. presents Tony's Ticketed Dinner
Please join Hog Island Oyster Co's founding partner, John Finger and James Beard Award-winning chef and author, John Ash for an intimate celebration of our new cookbook, The Hog Island Book of Fish and Seafood. We'll gather at Tony's Seafood Restaurant on Thursday, September 7th from 6-9PM for a four-course dinner plus oyster bar and wine pairings featuring recipes from our new cookbook. Each guest will also receive a signed copy of the cookbook!
This special ticketed dinner will be served at the iconic, Tony's Seafood Restaurant in Marshall, overlooking beautiful Tomales Bay. The evening will begin with bubbles and a raw oyster bar, then we'll sit down to a dinner with wine pairings prepared by Tony's Head Chef, Joseph Gil.

1st Course: Halibut Crudo Wine Pairing: 21 Hog Island Oyster Wine, White Blend (Grapes coming from Cadre winery in Edna Valley, SLO)
2nd Course: Billi Bi Mussels Soup Wine Pairing: 21 Santori, Unfilitered Chardonnay (Grapes coming from Napa)
3rd Course: Sablefish with tomatoes, pine nuts and olives Wine Pairing: 21 Santori, Unfilitered Chardonnay (Grapes coming from Napa)
4th Course: Lemon Posset Wine Pairing: 2018, Château Grand-Jauga Sauternes, Bordeaux, France
You'll hear about each dish and wine pairing from cookbook author, John Ash and learn more from Hog Island co-founder, John Finger, about the 40 year history of Hog Island.
John Ash is a restaurateur, cookbook author, and two-time James Beard Award winner. He co-hosted the Good Food Hour radio show on KSRO for 35 years, and he has hosted two shows on the Food Network. Ash regularly contributes to the Santa Rosa Press Democrat and has written for magazines such as Fine Cooking and Eating Well. In 2014, Ash was honored by the Monterey Bay Aquarium as the Sustainable Seafood Educator of the Year. He lives in Santa Rosa, California. He is the author of The Hog Island Book of Fish & Seafood.
John Ash will be joined by Hog Island co-founder and oyster farmer, John Finger. Hog Island Oyster Co. is one of the nations leading producers of sustainable shellfish and is a pioneer in bay-to-bar restaurants. With a passion for serving an exceptional oyster experience, Hog Island owns and operates seafood-centric oyster bars and restaurants and has been shucking at events across the Bay Area since the company was founded in 1983.
