CLASS DESCRIPTION: Root vegetables, such as beets, onions, parsnips, potatoes and turnips, come in many shapes, sizes and flavors, yet they have a few things in common, they taste wonderful when roasted, braised or blended/pureed. During this cooking class, you will learn how to execute these three simple cooking techniques for guaranteed delicious results. Once you understand these simple techniques, you'll be able to create your own dishes without a recipe. By the end of this class, you know how to: 1. Roast, braise and blend/puree a variety of flavorful root vegetables 2. Create your own root vegetable dishes without a recipe 3. Identify the main health benefits of the root vegetables used in class

ABOUT THE INSTRUCTOR: Ashley Ritchie is a Registered Dietitian and Professionally Trained Chef. You may have seen her giving cooking demonstrations at the Serenbe Farmers Markets. Her cooking style reflects the culinary training that she received at the Natural Gourmet Institute for Health and Culinary Arts in New York City, where she studied under some of the most talented and health-minded chefs in the United States. Ashley has worked at the Atlanta, Georgia non-profit Open Hand and social enterprise Good Measure Meals since 2006 where she creates recipes that are healthy and delicious. Ashley teaches cooking classes at various locations in the community, including regular classes at Cancer Support Community Atlanta. She is also a chef contributor for the local Atlanta organization Garnish & Gather.
