Tasting Workshop: The Art and Science of Balsamic Vinegar
Join us on Wednesday, November 7th for a special workshop to learn about the art and science behind balsamic vinegar, commonly referred to as the Elixir of Kings through a tasting and pairing of select balsamic vinegar led by Chef Todd Spanier.
In this one-day workshop, you'll learn the art of making traditional balsamic vinegar, and the science behind the process. We'll demystify the confusion and differences between the traditional balsamic vinegar of Modena or Reggio Emilia, and other balsamic vinegars. Through this presentation of the balsamic vinegar making process, you'll have the unique opportunity to taste the 18 year old balsamic vinegar directly from each barrel. The barrels are set from five different Italian woods (Chestnut, Oak, Acacia, Cherry and Mulberry). You'll also experience a hands-on demonstration of the barrel racking process. These barrels from Renzi, the last cooperage to produce balsamic barrels in Modena, Italy, are on display at ICC's California campus for a limited time!
