Cooking with the Chorale 7: Elements of Flavor
The chefs of the Publix Apron's cooking school demonstrate the preparation of a four course meal and then each course is served in turn and paired with wine selected to compliment each dish. This year's edition is "Elements of Flavor" and will feature an international menu inspired by the Chorale's spring concert "The Elements."
1st Course: SCALLOP TIRADITO
Peruvian dish with Japanese influence, scallops are served slightly seared in a spicy sauce.
2nd Course: CELERY ROOT PUREE W/ AGRODOLCE
Celery Root Puree is served with agrodolce (an Italian sweet & sour sauce) made from charred carrots and pearl onions.
Main Course: KEY WEST JERK GROUPER
A taste of the Caribbean! Grouper seasoned with Jerk spice rub from Jamaica is served with Papaya-Red Pepper Jam and pigeon peas with yellow rice.
Dessert Course: EDIBLE EARTH W/ SEMIFREDDO
Edible earth is topped with smoked marshmallow semi-freddo and mocha veloute sauce.
Meals made without gluten are available with advance request.
As a special bonus, we will also announce our 2017-18 concert season at this event.
Tickets are $70 per person or $130 per couple.
Dinner begins at 6:30pm and tickets must be purchased in advance.
