The Pair-fect Dinner
Born in Seattle, Mark Delos Reyes has honed his culinary skills across three different continents. His journey began in 2010, where he spent a summer in Florence (Italy) studying Tuscan bread making and familiarizing himself with other local Italian baked goods. From there, he later spent time in England cooking at The Devonshire Fell. After spending nearly a year in England, he spent the next four years in Australia, where he would cook at three different restaurants carrying Michelin-star designations. At these restaurants, he was heavily involved with creating menu items and training kitchen staff. Mark has now returned to Seattle, where he is the kitchen manager at the Seattle Facebook Campus.
Delos Reyes menu for the evening reflects the worldly and casually sophisticated dining scene in Australia. Sarah Penn, co-owner of Pair, whos been friends with Delos Reyes family since childhood, is creating an Australian inspired cocktail list with a Guava Fizz, Passionfruit daiquiri and a Ginger Whiskey Sour as well as a list of paired wines.
