2nd Annual Chili Cook Off
Darkness Brewing is excited to announce our second annual Chili Cook Off! Ten Cooks will compete for the glory of victory and prizes while 30 guests will taste and vote on each of the chilies while enjoying a beer. We'll have three judges who will rate the chilies, and a peoples choice award for our guests to vote on.
Prizes! First Place: $75 cash, $75 Darkness Brewing Gift Certificate, and a first place medal. Second Place:$50 cash, $50 Darkness Brewing Gift Certificate, and a second place medal. Third Place: $25 cash, $25 Darkness Brewing Gift Certificate, and a third place medal. Peoples Choice Award: A $20 Darkness Brewing Gift Certificate and TeeShirt of your choice!
Guests: $10 admission gets you a 4oz taste of all 10 chilis for a total of 40 oz of chili, one beer ticket for a beer, and one vote for peoples choice winner.
Cooks: $25 registration You'll create your best recipe of 6 quarts of chili and bring it in a crock pot with utensils to keep warm and serve. We'll provide electricity, tables and everything else needed, and a beer ticket for a beer while you're hanging out.

CHILI COOK GUIDELINES & FAQS Darkness Brewing is not sanctioned or sponsored by the International Chili Society (ICS), the Chili Appreciation Society International (CASI), or any other chili cook-off organization. This is strictly a "for fun" event.
CHILI QUANTITIES Each Cook is asked to prepare a minimum of 6 quarts (1.5 gallons) of chili for the Cook-Off. Chili will be served in 4 oz. cups and spoons provided by Darkness Brewing.
CHILI INGREDIENTS The use of commercial ground chili powder is allowed, however complete commercial chili mixes such as just add meat mixes that contain pre-measured spices and/or store-bought/canned chilis are NOT permitted. Please submit your best tasting chili using only safe and edible ingredients. Beans, rice, and pasta may be included as ingredients.
COOKING THE CHILI Chili must be cooked thoroughly prior to the start of the event. You are not permitted to cook on site, but will have access to power for your crock pot to keep it warm You are responsible for supplying all of your own equipment, serving utensils, pots, etc. (No butane heating elements are allowed at the event). Darkness Brewing will provide tables, chairs, tasting cups, spoons, napkins, a ticket box for Peoples choice tickets, a fire extinguisher, and a bottle of hand sanitizer.
TICKETS No free tastes of chili to consumers without tickets shall be allowed. One sample of 4 oz. will be submitted to each judge from each chili entry. The remainder of the chili will be served to our Chili Cook-Off patrons. There should be plenty for contestants to sample each others chili.
CHILI SUBMISSION The event will be setup and begin at 1pm on Sunday April 9th. Chili will be submitted for judging between 1:30 - 2pm. A representative will collect your judges cup and present the sample to the judging area.
CLEANUP Each team is responsible for its own cleanup. This includes trash removal to the trash cans provided by end of the day.
AWARD CATEGORIES Each chili will be judged based on the following criteria on a 5 point scale: 1. Color - Chili should look appetizing. A reddish brown appearance is generally traditional and expected but a white chili or chicken chili is also acceptable. 2. Aroma - Chili should smell good. This also indicates what is in store when you taste it. 3. Consistency - Chili must have a good ratio between sauce and meat. It should not be dry, watery, grainy, lumpy, or greasy. Vegetarian chili (no meat) is also acceptable for entry, and will not be judged on meat content or lack thereof, but rather on overall flavor. 4. Taste - Taste, above all else, is the most important factor. The taste should consist of the combination of the meat, spices, etc. with no particular dominant ingredient. 5. Aftertaste - The aftertaste, or bite, is the heat created by the various types of spices and/or peppers. (Note: HEAT is not a grading scale factor)
PEOPLES CHOICE AWARD Patrons will purchase tasting ticket on-site and on-line. The taster will also receive one (1) Peoples Choice Award ballot.
FOOD PROTECTION All open food should be protected from contamination by the public. Keep foods covered as much as possible to protect all open foods from flies, dust, insects, and the public. Screening of booths is recommended. All food, food containers, and utensils should be kept a minimum of six (6) inches above the floor. Handle foods as little as possible. Use utensils (i.e., tongs, scoops, etc.).
UTENSILS Use only clean utensils. Use only single-use, throw-away spoons, forks, cups, etc. for serving guests (provided by Darkness Brewing).
