Not your average pig roast. Join Chefs Matthias Merges and Eric Lees of Yusho for Folkart's first Dinner with Friends, a tribute to Tonichi Sama (Master No. 1 Pig).
1st Course: Snacks Tempura surf clam / Unagi takoyaki / Jellyfish springroll / Shime saba- koji pickle, kombu / Oyster motoyaki
2nd Course: Charcuterie with umeboshi mustard, pickles, rice crackers Shaved 3 year old Gunthorp Ham / Whipped miso rillettes / Dashi headcheese terrine
3rd Course: Taiwanese dan dan noodles, pork belly, edamame, tian mian jian & do ban jian
4th Course: Banana leaf wrapped pork shoulder bo-ssam, kimchi, sesame leaf, ginger, scallion
5th Course: Okinawa sweet potato soft serve, sesame dipped cone, matcha marshmallow, sudachi puree
Beverage options available for purchase the night of the event include rare Japanese whiskey, craft cocktails and an exclusive wine pairing by Robert Houde.
