Whole Lamb Carcass Processing - FULL DAY
Spend the day with us to experience and discuss how to 'legally' harvest and sell lamb; featuring slaugter footage, food safety, best practices and equipment used to obtain primals and retail cuts. Eric Shelley, our Livestock/Meat Processing Expert will teach you popular retail and farm market cuts while concentrating on whole carcass utilization. Attendees will also participate in grinding, mixing and stuffing lamb sausage; sausage sampling is promised to be a delicious hit. Participants will go home with a share of the locally-raised lamb processed at the workshop.
