Basics of Meat Science
Join us for a two hour presentation & discussion regarding the basic methods of meat science! We'll debunk the industry myths about producing palatable meat, and delve in to pre-slaughter techniques and the factors behind it like genetics, sex, age, feeding, transport and lairage. After learning about slaughter methods, practices, and storage, we'll cover everything you need to know about processing procedures including: cutting, tenderizing, and packaging, as well as basic cooking methods to enhance natural meat palatability. You'll be prepared to take your next delicious creation from the slaughterhouse to the table.
