A Dinner Amongst Friends.
Join us for a night of great spirits paired with some local cuisine! Chefs Michael Wolford and Jose Gonzalez will be mixing it up in the kitchen using spirits from the Infinium portfolio and locally sourced products! Sonny Wallace will be shaking up some tasty libations all night! Sabrina Lassale (FL's most loved Infinium representative) will be in town joining us for dinner and throwing a ton of Infinium spirit knowledge your way! The menu for the evening is as follows:
1st course
Flounder Ceviche- Candolini Grappa, cucumber, citrus, local tomatoes, and fresh herbs
2nd course
Duck Bruschetta- Punt e Mes, Gaineville local croustini, and wild berries
3rd course-
Seared Scallops, Vermouth, roasted fennel, brown sugar seared scallops, and fresh herbs. Served with a frisee salad.
Frisee salad- frisee, bacon, pickled shallots, apples, and quail egg with a Dijon vinaigrette.
4th course-
Rabbit Roulade- Local free range rabbit stuffed with wild rice and rainbow chard finished with a Fernet Branca and port wine reduction. Accompanied with savory roasted Brussels sprouts and butter poached carrots.
5th course-
DESSERT!!!! Final touches are being made to this course, however, a local grapefruit granita is definitely included!
Cocktails will be announce the night of the event, but I assure you, Sonny doesn't disappoint. After the first paired cocktail the rest will be 2oz. This is to ensure everyone drinks responsibly and enjoys the food!
