Crafty Cuisine - 6 Course Beer Dinner
Crafty Cow and KARBEN4 are proud to present - Crafty Cuisine! The 6 course beer dinner is set for 7:00 p.m. on Thursday, February 25th at Crafty Cow. The theme is Molecular Gastronomy, also known as Molecular Cuisine or Modernist Cuisine, which is a culinary discipline that investigates the physical and chemical transformation of ingredients during the cooking process. Each dish is an experiment of what flavors, textures, aromas, artistic presentations and other experiences a set of ingredients can provide. An 8 oz. pour of KARBEN4 craft beer is selectively paired to compliment each dish. We hope you'll join us for Crafty Cuisine!

1) Seared halibut with jalapeƱo emulsion and orange spheres.
Beer Pairing : KARBEN4 Fantasy Factory l American IPA l 6.30% ABV
2) Caprese salad with arugula, burrata, tomato, basil oil and balsamic pearls.
Beer Pairing : KARBEN4 Lady Luck l Irish Red Ale l 7.50% ABV
3) Disappearing Foie Gras noodle with fresh diced vegetables and capon.
Beer Pairing : KARBEN4 Champagne Tortoise l English Dark Mild Ale l 5.30% ABV
4) Seared scallops with tri-color carrots done three ways: noodles, emulsion and seared; with a pea puree.
Beer Pairing : KARBEN4 Block Party l American Amber / Red Ale l 5.60% ABV
5) Seared Beef Tenderloin marinated in Lady Luck with a display of mushrooms done four ways: seared, puree, pearls, and chips. Drizzled with a blackberry au jus.

6) Coconut Panna Cotta with a dehydrated peach, strawberry and Tokyo sauna caviar. Beer Pairing : KARBEN4 Silk Scorpion l American Black Ale l 7.50% ABV
