KAMAYAN NIGHT II at HIRO
Kamayan is a special Filipino way of eating. It comes from the Tagalog word kamay meaning hand, so it literally translates to eating with your hands. Eating with your hands is part of the local culture in the Philippines and has been passed down for generations. This is the inspiration behind Kamayan Night at HIRO.
Malou's cooking is a creative combination of traditional and modern Filipino Food. As pictured above, Malou will prepare a spread of scrumptious Filipino food served on a long table lined with banana leaves. NO forks, knives, or spoons needed here! You will get to put your hands to work and eat kamayan style. If you haven't tried this yet, now is the time. This will be one of your most memorable dining experiences.

Laing Triangulo // laing (taro leaves) curried with crab fat wrapped in wonton wrappers; deep fried and topped with yogurt mint
Calamansi Tinapa Kale Salad // kale with tinapa (dried scad fish), red egg, tomatoes with star fruit tossed in calamansi dressing
Crispy Pata // twice cooked pig's knuckles: souvide then deep fried with sweet soy plus green and red chili dip
Skewered Chicken Tocino // grilled chicken marinated in sweet soy, pineapple and sherry
Nilasing na Hito (Drunken Catfish) // deep fried catfish with dinengdeng puree (eggplant, okra, spinach in shrimp paste puree) on mustard leaves
Grilled Lengua (Grilled Beef Tongue) // grilled beef tongue with plums and gourds pickled in passion fruit vinegar
Dinuguan Steamed Bao // pork stewed in pork blood reduction on a bed of steamed bun
Grilled Squid Stuffed with Longanisa // grilled squid stuffed with cured pork sausage
Majah Blanca Panna Cotta // lemongrass coconut cream, corn, sprinkles of reduced coconut milk
