Tasting Elusive Burgundies of Sextant With Bistro Apps by Josh Eubank of Percy Selections
I first had a glass of Sextant Burgundy at Septime in Paris, one of the toughest restaurants to book. They could pour any Burgundy producer they want, but they choose to pour Sextant Burgundies by the glass. Then again only a few places have Sextant Burgundies on their list.
Sextant is Julien Altaber, a tiny producer in Saint-Aubin. This village, bordering both Puligny and Chassagne, has become the hottest discovery in the Cotes de Nuits and the wines have been in high demand. Top producers like Pierre-Yves Colin, other members of the Colin family, Ramonet, Hubert Lamy, Pacalet, Jadot, Leroy, and more produce wines from this humble village that borders both Chassagne and Puligny.
We'll be pouring a tasting of two white Burgundies and one red Burgundy from Sextant's latest releases. These wines come from organically farmed vineyards and Altaber ferments with native yeasts and applies no additives and no sulphites during vinification.
Leading our tasting is Sextant importer Josh Eubank of Percy Selections. Josh happens to be also a trained chef. He cooked professionally in restaurants in New York and the West Coast before deciding that wine was his calling. He still cooks some days for Ordinaire Bistro in Oakland. He'll be preparing a couple of appetizers to accompany the wines.
