Vegetables and Beer
Rue is the name of our upcoming modern french small plates restaurant. While the search for a space continues, we are fortunate to bring our vegetable-focused cooking to the Sideyard Farm!
After working together in restaurants in Southern California, we both spent time at the prestigious Chino Farm in San Diego. Thanks to the generosity of the Chino family, we were exposed to hundreds of varieties of fruits and vegetables that most people don't even know exist. We took our farm education on the road with various pop-ups in Los Angeles and San Diego, under the "nobodies cooking dinner" moniker.
Today, we call Portland our home, and want to invite you to a four-course dinner pairing vegetables with local beers provided by our new friends at Royale Brewing and Commons Brewery.
Here's the menu:
1. Asparagus: Spring onion, goat's milk ricotta, sorrel
2. Roasted Carrots: green garlic, lavender, brown butter, chrysanthemum
3. New potatoes: english peas, tendrils, mint, squid ink
4. Sprouted-barley custard: toasted grains, rhubarb
