Cold Water Excursion
Chef Aaron Willis is excited to flex his culinary chops when he serves up a 5-course meal focused on the freshest, most delicious, sustainable seafood of the season.
Char-grilled octopus tops a salad of bright greens, spicy Calabrian peppers, and briny olives. A shrimp course presents a tale of textures in rich, creamy shrimp bisque topped with succulent, poached shrimp, served with a basil pistou. Plump scallops pair with Gothberg Farms (Bow, Washington) fresh chevre gnudi and delicate salmon roe. The meal is highlighted by Alaskan King salmon accented by 50-year aged balsamic and fresh asparagus.
Dinner is $80 per person, including tax and gratuity.
