Slow Food Hudson Valley: The Art of Charcuterie
Chef John Kowalski and author of Art of Charcuterie will be demonstrating techniques for making fresh and cured sausage items. It is an introduction to the skill and craft of charcuterie with some hands-on activities along with a tasting. Each attendee will receive approximately a pound of pancetta which they can continue to cure at home.
There will be a tasting of products as well which will include some of John's more sophisticated products.
John will also be selling his book at the end of the day. Recipes for the made products will be there as well which will include a list of ingredients, sources of ingredients and techniques.
This will all take place at the kitchen at Montgomery Place Orchards in the Red Hook area at 8 Davis Way between 11:00 AM and 1:00 PM.
