Winter Wonder - Herbal Winter Health
Join herbalist Maria Billington for an exploration of herbal uses during the festive season
In this friendly online session via Zoom, Maria will look at how herbs and nature can help us guide ourselves safely through the dark months - covering simple syrups, mind medicine and the benefits of nurturing nature.

1. Pre-workshop challenge: Dandelion Coffee Challenge
Autumn is the best time to dig up dandelion roots as all the vitality and power of the plant is being stored deep in the roots ready to emerge again in the spring.Dandelions send down a long tap root so its best to dig them out when the ground is wet as they will slide out more easily. Our challenge is to go and dig some dandelions up (from a garden or allotment where you have permission ) and make some dandelion coffee.
Once youve dug up some roots, give them a good scrub clean and leave them to dry somewhere warm for a few days. Next slice them and chop them finely or chop in a food processor. Then spread on a baking tray and roast in the oven with the door open on a medium to high heat. When cooled grind them in a coffee grinder and store in a dark jar.
To make your coffee put 6 tablespoons of grinds into 500ml of boiling water and leave to steep for 30 minutes. Strain into a saucepan and reheat to the desired temperature. You could try adding spices like cinnamon or anything you like we invite you to experiment. Serve with milk and honey if you like!
