2014 MO Wine School
Organized and conducted by the Grape and Wine Institute, based at the University of Missouri, in Columbia.
MO Wine School Tuesday June 10 Thursday June 12, 2014
Location: 245 Stringer Wing 1406 East Rollins Street University of Missouri Columbia MO 65211 This is a three-day workshop for those with a basic understanding of winemaking who are seeking hands-on learning experiences to further develop their understanding and skills. The selected topics are complementary to the topics covered during the 2012 Wine School
The intended participant is a winemaker with several years of experience, seeking ways to improve the quality of the final product.
The workshop's objectives are:
1.To understand the importance of YAN measurement and adjustments, pre-fermentation 2.To familiarize winemakers with fermentation management techniques, e.g. regarding sluggish fermentations, MLF effectiveness, tannin modifications, avoiding oxidation. 3.To understand pros and cons of wine finishing options, e.g. fining tactics, barrels vs. oak chips. 4.To identify personal thresholds of wine flaw detection 5.To learn and employ valid sensory science techniques in determining blending proportions. 6.To have winemakers conduct wine quality assessment through participation in a "mock wine competition" focusing on wines of hybrid and American native grape cultivars. 7.To assess the winemaker's ability to accurately detect wine flaws and faults.
