Experience farmstead cheese straight from 2023 ACS Best of Show winner The Farm at Doe Run. Head Cheesemaker Miguel Vivanco and Head Affineur Olivia Haver CCSE will guide you through the process of what it means to produce award winning cheese while working with nature from make to maturation. Topics include managing milk flow while embracing seasonality, building a quality program from scratch, and designing new cheeses. Story telling, science, and sensory collide while tasting through a selection of handpicked cheeses including Best of Show winner St. Malachi.
The Farm at Doe Run is a farmstead, grass fed, artisan cheese operation in the rolling hills of Chester County Pennsylvania. The farm raises Jersey and Normande Cows, sheep, and goats with a seasonal milking schedule. With a focus on creativity, the cheese collection regularly includes limited production runs and one of R+D projects. Each cheese is a distillation of the lush grass grown in SouthEastern Pennsylvania and intended to showcase each milk type.
