Bloomy Rinds with Lake Mendocino Creamery
If you've ever thought of making bloomy rinded cheeses, or you've made them but run into problems or can't make them consistent, this class is for you. Pav Cherny, owner and cheese maker of Lake Mendocino Creamery (a.k.a. linuxboy from Cheese Forum) will walk us through the cheesemaking process in excellent detail, emphasizing recipe development, culture selection, safety measures and more. If you only take one class this year with the CA Artisan Cheese Guild, THIS IS THE ONE!
This class will include:
* Overview of bloomy rind cheeses and their place in the marketplace * Steps for selecting and developing an appropriate recipe for you and your creamery * Information on mineralization, starter cocktails, gel formation, paste stabilization, ripening cascades, methods of flavor and texture control, rind options, microaffinage, sensory analysis and MORE!!!
The very best part: Class will be truly "taste-buds" on as we will enjoy over 10 taste tests of bloomy rinds that Pav has prepared for this class for both our learning and enjoyment. Delightful.
Class will run from 9:30 to 3:30 pm on Friday, March 28th, 2014.

Class Cost: $100 for CACG Members, $130 for non-Members. Lunch is included.
