Lamb Butchery Class
We are thrilled to be hosting this butchery workshop at Long Table Farm where we will utilize their produce and newly built outdoor kitchen to cook a wood-fired lunch after a 3 hour hands on butchering demo. Students will arrive at 11am and butcher pasture raised lambs from Laughing Stock Farm. After we butcher, students will enjoy a Mediterranean lunch featuring the lamb we've cut and a pairing of local Pinot Noir. Each student will take home 15#s of fresh Lamb!
Teacher, Gracie Schatz, began butchering in Italy where she helped raise heritage pigs in the Tuscan hills. She then moved to San Francisco where she managed a woman-owned butcher shop. She raised her own pigs in the sierra foothills and after extensive cooking at some of the best restaurants in the SF Bay Area, moved to Eugene to work at Newman's Fish Company and start Heart of Willamette Cooking School. The highest quality ingredients make the best food and that is why we will be working with beautiful pasture raised lambs from Laughing Stock Farm.
