Worth Our Weight Chef Dinner John Franchetti
Chef John Franchetti of Franchettis and guest Pastry Chef Tosha Callahan will prepare a Sunday Supper at 5 pm on October 14th with Chef Robb and the apprentices. We'll be at Franchetti's Restaurant on 1229 N Dutton Avenue, Santa Rosa, CA 95401, for a festive night with live music!
Since it is Oktoberfest month, we are going to do a German Menu.
Passed appetizers
Flammkuchen: German/Alsatian pizza with onions, speck, and sour cream
Arancinis with sauerkraut and sausage, mustard cream
Sit down first course
Bread dumpling with chanterelle mushrooms and thyme demi
Dinner
Roulladen with red cabbage: rolled and stuffed beef with cooked red cabbage
Salad
Boston bib lettuce, herb vinaigrette, marinated carrots
Dessert
Apple -cranberry crisp
Orange maple oat topping with whipped ganache monte
