Cooking 101D Healthy Snacks and Desserts
In this class we will explore quick and easy ways to create healthy "Grab n go" snacks: baked sweet potatoes dressed with coconut oil; dates stuffed with a variety of fillings; and rice/nori wraps with: veggies, pesto dip, & goat cheese. Healthy Desserts can also be used for healthy snacking or to spruce up a simple dinner: mashed okinawan sweet potatoes in a no-bake Sweet Potato Pie with raw crust; Baked millet pudding, and a recipe for "spiritual food for the body" from Edgar Cayce featuring figs, dates and millet. We will discuss the health benefits of the purple sweet potato (high contents of anthocyanin the purple pigment) and millet (one of the most digestible and non-allergenic grains available, and it is one of the few grains that is alkalizing to the body).
