Advanced Affinage with Michael Kalish
Michael Kalish, trained by Hervé Mons and Luigi Guffanti as well as by artisan cheese makers across France, Switzerland, and Italy, will provide a window into European affinage through film, photography, and narrative in a highly educational class on the art and practice of aging cheese.
The class focus will be on the fundamentals of building and working in cellars without leaving the context of a cheese makers routine or a retailers search to preserve the integrity of received goods.
