Cheese Chemistry 101 with Pat Polowsky
Join cheese industry professionals for a fascinating conversation with Pat Polowsky, food scientist and creator of the Cheese Science Toolkit. Pat has worked with the Wisconsin Center for Dairy Research Cheese Research Group and has presented multiple workshops at the American Cheese Society's annual conferences, the Vermont Cheese Council and California Cheese Council's annual meetings. Pat's compilation of cheese science tutorials and visual aids is available at www.cheesescience.org.
Pat will present Cheese Chemistry 101 to an audience of cheesemongers, cheesemakers, chefs, and sales professionals in the cheese industry. This should be a fascinating deep dive into cheese science and an opportunity to discuss some of the intricacies of cheese with like-minded colleagues.
The presentation will be held in Lowell's beautiful Luna Theater. We'll serve a sampling of local cheeses, wine, and beer and allow plenty of social time to taste and talk.
Admission is FREE for current members of the Massachusetts Cheese Guild.
