Farm-To-Table Lamb Class

Day 1: Saturday MAY 19th  9am until done (3pm)

On Farm at Newman Creek Farm located at 32 Hunter Ranch Road, Elma (Dorper Lamb) - 9am until done

The first half of the day takes place outside regardless of weather. Please dress appropriately. The second half will be inside the farmhouse. Please bring a change of shoes or be prepared to go shoeless!

We will start the day with Farmers Neil and Cindy, then Savage Mobile Slaughter dispatching the lambs. We will see how to skin & learn basic anatomy. Nearly all parts of these animals are being used in some manner: Hides will be saved for tanning, organs will be used in the kitchen in the afternoon (some to take home) and anything that people will not be using will be going to raw-fed dogs.

Melissa Davis will be taking us inside once the slaughter is done and showing us how to make use of the fresh Offal & Organs.' If you think you dont like organ meats please come prepared to be surprised. It is rare in this grocery store age that you are able to find fresh organ meat and it is a treat.

9am-12:30: How to cut and prep - Tracy Smaciarz of Heritage Meats

You will be in groups working on cutting and wrapping for a whole lamb. Each person will be taking home approximately 10 pounds of meat. Please bring a boning knife, cutting board & cooler or cooler bag to take your meat home in.

Short Break: Please bring your own sack lunch & drink.

1pm-4pm: In the Kitchen  chef to be announced

Local chef will be using some of the cuts from the morning class to show us cooking tips and tricks. Recipes will be provided as well as the opportunity to sample the items prepared.

Hands-on tickets are $250 each.

This price includes:

Hands-on cooking the first day & offal to take home
Participation any time chefs or Slaughter company are able to have you assist
Hands-on cutting and wrapping of lamb (small groups of 2-3 per lamb)
Minimum of 10 pounds of lamb to take home

'Observer' tickets are on a sliding scale, $25-$100.

There will be room for an additional 6 people to watch and learn, without participating directly.  These spots will be on a sliding scale/pay-what-you can  this is valued at $100 each and we request a minimum of $25 per person, encouraging each to give as they are able. Depending on availability there may be the opportunity for these attendees to purchase additional meat at $5 per pound.
