The 30 Day Vegan Challenge (with a Mentor)
Trying to eat more plants? Curious about a vegan lifestyle? Want to try it out for 30 days to see if it's for you? Well...why not take the 30 day vegan challenge?
We will commit to eating vegan for 30 days. We will meet for 4 Mondays in a row. We will read and discuss the textbook, "The 30 Day Vegan Challenge" by Colleen Patrick-Goudreau. We will meet weekly to share our successes and challenges, as well as to prepare & share a meal. Our final meeting will be a potluck, with each member of the group bringing a vegan dish.
Cost: $150 (this includes the textbook, food for the first 3 weeks' meetings, and unlimited support via text and email.)
Laura Beck, Your Vegan Mentor will be there to support you throughout your journey!
Laura Beck is a natural educator. She began her career teaching young children to play the piano and guitar. After 13 years in the private sector, Laura took a position teaching elementary school music in the public schools, which lasted for 11 years.
In 2017, she chose to retire early to pursue a new career in vegan lifestyle coaching & education. She has been vegan for almost 8 years, and went through the Main Street Vegan Academy to obtain her certification. She has also taken Rouxbes Forks Over Knives Cooking Course and Rouxbes Essential Vegan Desserts Course. She has been a mentor to new vegans for the past several years. She has extensive knowledge of all things vegan, through research, classes, workshops, Vegfests, social media, and just plain life as a vegan.
Laura resides in Arden, having relocated from MA to enjoy the beauty of western North Carolina, with all of its diversity and energy. There is always something to do here and always something new to learn! In her free time, Laura enjoys singing, writing music, cross-stitch, baking, learning new things, creating spreadsheets, and playing Lumosity games to stay young!
