Dinner with Chef Micah Miller of South Restaurant
Growing up in Northern New Mexico, much of his first real cooking experiences were steeped in the flavors and styles of the Southwest. At 17 he started his restaurant career, and soon began cultivating his love for classic French cuisine.
Micah landed in Alaska at 19, working positions at Spenard Roadhouse, Maxine's Bistro and the Royal Wolf Lodge in Katmai National Park. Currently Micah is the night time sous chef at South Restaurant + Coffeehouse, and also works with Chef David Thorne of Delicious Dave's Catering, and under his own banner, Hooligan Catering and Consulting
Micah's dishes frequently profile smoky and spicy flavors of the southwest. His plating style is reminiscent of classic french style cuisine. And his most recent influences come from his time spent here in Alaska, so expect to see lots of locally grown veggies and fresh seafood.
