Fermentation Class #2 with Laura Schue
Here's an intro to fermentation that will boost your confidence for making healthy and tasty vegetarian dishes full of flavor and full of nutrients. This class will focus on anaerobic fermentation, which is the standard for vegetables. Our menu includes kimchi, red beet/ginger kraut, turmeric/jalapeño carrots, and fermented salsa verde. I'll share my favorite recipes, we'll sample special items and talk about fails and pitfalls, and you'll take home a jar of each item with homework to complete the ferment.
Laura Schue, passionate fermenter, returns for another round of The Art (and Science) of Fermentation. Laura is a small business owner, gardener, parent, and lover of creating the best food of our times using old techniques and scientific understanding. She has degrees in biology and chemistry, and a family history of grow your own/store your own. We'll have some taste testing, look at some equipment, and share notes and pro tips.
