our next culinary adventure takes us through the italian alps to italy's northernmost region, alto adige. on this evening, we will enjoy alois lageder's wines, a fifth-generation winemaker whose world-class winery is nestled in the mountains of bolzano. he is revered throughout italy for the quality of his wines, which speak to the region of sudtirol. although very much a part of italy, german is the primary language spoken in alto adige, and the influence of austrian grapes and winemaking is strong. the wines are clean, bright, and complex, and pair perfectly with the menu chef bradley ceynowa will be preparing on this evening.
