The Other Red Meats
Over the past year, we've run a series of classes on Whole Hog Breakdown. This month, we are pleased to add a new offering to the line up of whole animal classes: The Other Red Meats: A Good Ol' Fashioned Wisconsin Farmstead Whole Goat & Lamb Breakdown
While we'd love to actually conduct the class out on the farm, we're going to keep it simple and do it here in our meat atelier on Main St. Like all the classes, we're limiting the number of participants, this time to just 12. Each participant will have the opportunity to breakdown his/her own half into primal and a subset of sub-primal cuts. Additionally, we'll discuss the process of making goat bacon goat salami and sausages; we'll send folks home with some lamb chops, goat tenderloins and other tasty cuts. As usual, we will have snacks upon arrival and a break for dinner, served by Underground Catering.
