The Healthy Hedonist Holidays: A Year of Multi-Cultural, Vegetarian-Friendly Holiday Menus with Myra Kornfeld
The Healthy Hedonist Holidays includes a collection of American holiday feast menus, each with a vegetarian and a fish or poultry main course. The multi-cultural feasts range from Eastern European Christmas Eve, to Ethiopian Kwaanza and Southwestern Thanksgiving.
October 12th is Eid al Fitr, the end of Ramadam, and a time for feasting. This Turkish and Moroccan inspired menu is the first holiday feast in the book.
Pita Toasts with Roasted Red Pepper Pesto with Almonds and Sesame Seeds ; Turkish Red Lentil Soup; Green Leaf Salad with Crispy Shallots and Pomegranate Molasses Dressing; Organic Chicken Breasts Stuffed with Onions, Cinnamon, Almonds, and Cherries; Chickpea Charmoula Strudel (vegetarian main course); Quinoa-Carrot Pilaf with Saffron, Mint, and Spiced Carrots; Harissa Spinach; and Semolina-Walnut Cake with Macerated Oranges and ice cream
