Prospect Wine Dinner with Emeritus
A whole lamb raised on Emeritus' home ranch in the heart of Russian River Valley will serve as the basis of the meal, and Emeritus Vineyard Manager Kirk Lokka will be present to offer insight about the farm's operations. Chef Kapur will utilize produce grown on the 115-acre property, making this dinner a sincere offering of the vineyard's yield that marries the cumulative talents of chef, farmer, and vintner.
Champagne Reception at 6:30pm
$150 per person / all inclusive
Reception:
sheep's milk ricotta on toasted sourdough, truffles spiced lamb, pinenuts, currants, phyllo
Dinner:
1st crudo of emeritus lamb, favas, sea beans, smoked mushrooms, rye, toasted nettles
2nd lamb merguez smoked over grapevines, grape leaf braised octopus, shelling beans, elements of romesco
for the table: polpette & roasted grape skewers
3rd mixed roast of loin, belly, & ribs, lamb's quarters, smoked eggplant, eggplant chutney, lamb jus
for the table: sheep's milk polenta, lamb fat potatoes
dessert roasted peaches from the vineyard, corn ice cream, streusel
for the table: chocolate truffles & caramel corn
