Fred Berkmiller
Fred Berkmiller started his hôtellerie apprenticeship in his home town of Tours in the Loire Valley. Settled in Scotland since 1995, Fred opened his first restaurant in the Grassmarket in 1998, setting up in the West End a few years later in L'Escargot Blanc, and opening L'Escargot Bleu in 2009. He was from the very beginning part of the 'Budding Chefs' series initiated by the Institut français d'Ecosse.
Hugely committed to cooking the very best Scottish produce with a French twist, he buys whole animal carcasses to cook - teaching his chefs all about butchering, cooking and using every single part of the animal without any waste.
