Ivar's Januik Winemakers Dinner Featuring Copper River Salmon
Enjoy a special evening with an exquisite and intimate five-course seated dinner featuring wines from Januik and Novelty Hill Winery. Wine pairing introductions from acclaimed owner/winemaker Mike Januik with a seasonal Copper River salmon inspired menu from Executive Chef Jason Bray.

Fresh Copper River King Salmon and Niman Organic Pork Belly - Featuring Copper River King salmon along with a tender piece of braised Niman Ranch organic pork belly served with a tart cherry compote and fresh spring greens
~ Paired with both the Januik Columbia Valley Merlot and Januik Klipsun Vineyard, Red Mountain Merlot
Alder Smoked Fresh Copper River Sockeye Fillet - Cooked over our open Alderwood fires. Ruby red colored fillet of fresh Copper River Sockeye served with thyme- herbed gnocchi and a rich flavored veal demi-glace.
~ Paired with both the Novelty Hill Columbia Valley Merlot and Novelty Hill Stillwater Creek Merlot
Guittard Dark Chocolate Pot Du Crème - Sweet dark California chocolate served with a Northwest huckleberry jam and rosemary infused shortbread cookies
