The History of European Charcuterie
One of the things we love most about preserved meats is that they are fascinating history lessons in edible form. Whole history theses are contained within that intestine casing. So In honor of our geeky side and charcuterie's spot light in this week's Good Food Week, we thought it was prime time to inaugurate our new monthly history lesson with Morgan Maki.  For this premier Morgan will discuss European charcuterie from three points of view: necessity, cross-cultural exchange, and refinement. We'll start with a quick sausage demo since it seems like a fun way to get excited about salumi, and of course we'll have things to taste. Come ready to learn through your eyes, ears, and belly.
