The Prince of Pig: Iberico Salumi
Join us for an introduction to The Prince of Pigs, the Iberico. These are the famous acorn eaters of Spain that are used to produce luscious, cured, marbled, Iberico Ham (or Pata Negra) renowned worldwide. Like Champagne designation, only certain cured meats can boast the Iberico stamp of approval, and during this one hour tasting and introduction class Michele Buster of Forever Cheese and Abel Rodriguez of COVAP will discuss Iberico from snout to tail so you know exactly why all lomo is not created equal. And since we believe the best way to learn is to taste, we'll be sampling some of this highly sought after "embutidos" while we listen and talk.
