Pig Butchering Demo and Lunch.
Celebrate the kick-off of Jimmy's No. 43 Greenmarket Sausage Week with a very special Pig Butchering Demonstration and Lunch with The Piggery, a heritage, pastured pig farm in the Finger Lakes region of New York State. The Piggery is a unique farm and this is their mid-winter celebration to promote their CSA and to demonstrate their raising, butchering and charcuterie skills.
The demonstration will include an educational butchering of a half-hog and will feature a light lunch, full of special pork treats from the farm. We will be featuring live bluegrass as well!
