Neah Bay halibut with Bloomsdale spinach, Meyer lemon,
charred leek and pickled clam

2nd Course - Baer Maia
Guinea hen and foie gras terrine with rhubarb agro dolce,
smoked hazelnuts and miners lettuce

3rd Course - Baer Arctos
Wagyu beef cheeks with pommes de terre Robuchon, grilled ramps
and morel mushroom sauce

4th Course - Baer Ursa
La Cocquette, Black Sheep Creamery Tomme and Dinahs cheese
with quince preserve
