Suggested wine pairing list - Liberty wine stores will give you 10% off if you say your going to a Swallow Tail Supper Club.
I would start with a White Burgundy or Viogner - a floral leaning, full bodied white... or sake actually and then move to a Bordeaux/Chianti classico or Rioja
Vina Ardanza is AMAZING at Liberty if they have any left ($50 ish). Muga or Beronia ($25) are amazing Rioja's to try that are usually available at the BC Liquor stores.
A muscat based sweet wine would be lovely with dessert or a vin santo (Italian style sweet wine)
