About Chef Leonardo Maurelli, III Chef Leonardo Maurelli, III is the Executive Chef of Central Restaurant located in downtown Montgomery, in the heart of the Alleyway Entertainment District. Chef Leo is a native of the Republic of Panama. He immigrated to Alabama in the early 1990's and quickly began his apprenticeship in the culinary field, honing his skills under the tutelage of many award winning and world traveled chefs. He is an avid supporter of local farmers, cheese makers, beer makers and artisans. Chef Leo has been the recipient of many awards with the latest designation as Best Chefs in America: South. About Chef Collin Donnelly Collin Donnelly cut his culinary teeth and immediately fell in love with the restaurant business at the age of 16. After graduating highschool and spending four years the United States Marine Corps, Collin headed to the prestigious New England Culinary Institute in Vermont where he received an Associate degree in Culinary Arts. In Collin's professional career he has worked as a chef and pastry chef in Massachusetts, Oregon, Washington State, Alabama, Tennessee, and Virginia. Collin was the executive chef for five years at the upscale eatery, The Yellowhammer Restaurant in Historic Downtown Waverly, AL. He also worked at the award winning Blackberry Farm in Walland, TN. Most recently Collin was the executive chef at The Red Hen in Lexington, VA where Collin utilized the finest local and seasonal products available. In 2012 Collin was awarded Cooking Light's Trailblazing Chef Award for best Small Town Chef. Currently Collin is bringing his talents to Acre in Auburn, where his focus is creating artisanal charcuterie, salumi, and other fine meat products.
About Bryan Krutz After graduating from the Ole Miss business school in 2003, Bryan moved to the FL panhandle where he operated a wine and cheese bar in Rosemary Beach for 6 years. As the GM and wine buyer, he honed his skills on not only the physical components of great wine, but also the trade in general and specifically sales and marketing. He is still based full time along Scenic Highway 30A in South W alton County, FL, where he assists in managing sales for the winery. He loves to visit the winery and get his hands dirty in the cellar a few times a year whether it be harvest time, racking, or bottling. Bryan believes it is of the utmost importance for him to know what is going on in the cellar first hand if he is out and about showing or selling the wines. He has three children in son Barron and younger twins Mae and Walter. His wife Cindy owns two clothing stores along 30A called Willow.
About Central Central's lunch and dinner menu is Chef Leo's unique multicultural take on traditional southern dishes and cuisine, doing so in an approachable, straight forward and elevated way. Central features southern inspired wood fired dishes prepared with fresh gulf seafood, local meats, greens and other seasonal ingredients. Located in an 1890's grocery warehouse, Central highlights exposed brick, flickering gas lanterns, 16ft ceilings and a bustling open kitchen. Central is open for lunch Monday Friday; 11am 2pm and dinner Monday Thursday: 5:30pm 10pm as well as Friday Saturday: 5:30pm 11:00pm.
