Protected European Cheeses with Sparkling Wines
Sue Sturman, Director of the Academie Opus Caseus, will make a special guest appearance at Casellula to teach about the structure, process, and significance of the European system that promotes and protects names of quality agricultural products and foodstuffs, specifically cheese. What does a PDO designation mean for quality? How does a cheese achieve PDO status? What are the politics around protected names? Should the US have a PDO system?
As this is scheduled for the morning, we will be pairing the selection of European cheeses with a variety of sparkling wines.
Sue Sturman has over 25 years in cheese education. At the American Cheese Societyshe led the creation of the Certified Cheese Professional Exam program, and has been a frequent presenter at ACS conferences. In 2015, Sue was elected to the Board of the American Cheese Society and also serves on the the Advisory Board of the Massachusetts Cheese Guild. She started teaching cheese in 1993, as Assistant Director of the Ecole Ritz-Escoffier cooking school at the Paris Ritz Hotel. She continued in New York as an instructor at New York retailers including Murrays Cheese, and for private and corporate clients. In 2011 Sue was inducted into the Guilde Internationale de Fromage. She has served as cheese judge in France and the USA.
Casellula, the premier cheese-focused wine bar in the US, has been operatingin New York's Hell's Kitchen neighborhood since 2007. They are now opening their second location in Pittsburgh. "Composing the Cheese Plate," a cookbook by owner Brian Keyser and former Casellula pastry chef Leigh Friend, will be coming out in the fall of 2016.
