Protected European Cheeses with Sparkling Wines
Sue Sturman, Director of the Academie Opus Caseus, will make a special guest appearance at Casellula to teach about the structure, process, and significance of the European system that promotes and protects names of quality agricultural products and foodstuffs, specifically cheese.
What does a PDO designation mean for quality? How does a cheese achieve PDO status? What are the politics around protected names? Should the US have a PDO system?

As this is scheduled for the morning, we will be pairing the selection of European cheeses with a variety of sparkling wines.

Sue Sturman has over 25 years in cheese education. At the American Cheese Societyshe led the creation of the Certified Cheese Professional Exam program, and has been a frequent presenter at ACS conferences.
