Chris Bashirov Newton, Chef de partie of Vinland restaurant is offering a once-in-a-lifetime special dinner menu.  Drawing from his Eastern-European/Jewish roots, and contemporary global cooking style, he will be presenting a unique 5-course dinner menu.

3 Courses - $35
Try a savory 3 course meal composed of Russian/Jewish home-style appetizers.

5 Courses - $50
Try 5 courses with your choice of entree, including dessert.

Bio -


Chris is a chef, artist, community gardener, and student.  He has been exposed to many different types of cuisine and loves to experiment with cultural fusion flavors.  His cooking style is grounded in using techniques from around the globe with fresh, seasonally available produce.  He grew up in New York City with an adventurous appetite, and has brought his talents to kitchens in New York, Minneapolis, Chicago, and Portland, Maine where he resides today.  He fell in love with cooking after an internship at Ouest restaurant in 2006 while he was still in high school, and has been pursuing knowledge and skills in kitchens ever since.

As a cook, Chris became concerned about the origins of food served in restaurants and at home, and soon started to take an in depth look at this process.  He became certified in Permaculture Design, and explored small farms and homesteads in New York State and Michigan, gaining first-hand experience gardening and learning natural methods of food production.

Today, Chris is a chef de partie at Vinland restaurant, where he is known to offer produce, flowers, and herbs from his own garden on dishes he sends out from the line. He can also be found volunteering with youth groups from Cultivating Community at gardens around Portland.  In addition, he's studying Nutrition at Southern Maine Community College.  

Chris considers himself an artist, where cooking and gardening are two parts of the same craft.  He believes that the more we delve into the world of food and nourishment, the more wonders seem to emerge.

Menu -


1st - Spring Salad
-Mixed greens and spring vegetables with a creamy dressing of roasted ramps and herbs.


2nd - Latkes
-Traditional Jewish potato pancakes served with sour cream and beet puree.


3rd - Borsch w/ Rye Oat Bread
-Homestyle vegetable stew, served with warm rye-oat bread and herbed butter.


4th - Entree

*Options
-Duck egg with kasha and cabbage salad
-Cod with purple slaw and coconut fried tortilla strips
-Lamb/pork sausage with mashed potatoes and fenugreek slaw


5th - Dessert
