Arabic Cooking and Baking Series: Kibbeh: The Lebanese Table
In this series, participants will be invited on a hands-on culinary journey through the Arab world, discovering the history, culture, and science behind some of the Arab world's most essential dishes and seizing the opportunity to produce them with your own hands. Taking us from the gulf, to North Africa, to the Levant, in this session, participants will explore the diverse legendary cuisines of Yemen, Tunisia, and Lebanon.

Learn how to craft one of the most renowned and delicious dishes enjoyed as maza, or small plates, in Lebanon and throughout the Levant: kibbeh. Crispy shells made with cracked wheat, or bulgur, are stuffed with mouth-watering savory fillings. In this class we'll learn how to make both meat kibbeh, stuffed with minced meat, spices, and pinenuts and vegetarian kibbeh, made with pumpkin and stuffed with chard and chickpeas. This traditional dish is sure to delight everyone's tastebuds!

PARTICIPANTS MUST PRE-REGISTER. NO WALK-INS ACCEPTED!

OUR INSTRUCTOR: Reem Assil

Reem is a Palestinian Syrian baker and social justice activist residing in Oakland, CA. After a decade of working as a community and labor organizer, Reem decided to pursue her passion in baking, working in dessert and pastry catering and as an owner and baker at one of the Bay Area's most esteemed cooperative bakeries, Arizmendi Bakery & Pizzeria. Her passion for food, culture and community has led her to Reem's, a bakery concept that celebrates Arab culture and cuisine through the provision of breads and pastries from the Levantine region of the Arab world.
