Cenaduria Zaragoza Mezcal Dinner
Join us for an evening of rare mezcals and traditional Mexican dishes!
First course:
Guacamole con tómatillo y chicharrónes, paired with Mezcal de Cuixe, a wild Karwinskii endemic to Oaxaca that takes 15-18 years to grow, fresh herbal and smokey
Second course:
Quesadilla de rajas con salsa de molcajete, paired with Mezcal de Espadilla, a wild version of cultivado Espadin, that was milled by hand, fermented in leather, and distilled in a clay pot.
Third course:
Tostada de tinga con joqcoque y rábano, paired with Mezcal de Mexicano, a wild agave that takes 20 years to grow.
Fourth course:
Pipian de puerco con arroz blanco, paired with Mezcal de Madrecuixe, a semi-cultivated agave that grows around corn fields and takes 7-8 years to mature.
Fifth course:
Nicuatole, a gelatinous dessert made from ground maize and sugar; paired with Mezcal de Tres Magueys, fermented from a combination of Espadin, Madrecuixe, and Bicuixe.
