The Whole Hog
Peter Sueltlenfuss of Fore Street Restaurant in Portland, demonstrates the art of butchering a whole hog for the best use of all its parts for charcuterie, sausages and curing. Participants will sample pre-prepared pt, terrines, pulled pork, and confit.
