On this very special weekend, we welcome a culinary visionary to our little town and our little supper club, Chef Dany Lamote.  Megan had the pleasure of taking a private cooking class with him after dining at his place in Todos Santos called SantoVino two years in a row.  She told him about her quaint supper club and invited him to be a chef.  To her surprise, he said YES! A bit about him:

Born in 1955, Dany was raised by Belgian parents in Kinshana in the Republic of Congo.  His father Carlos, a journalist and a photographer, was commissioned by the Belgian government to record and preserve the rich culture, nature, and cuisine of Africa.  Dany's mother, Ghislaine, is a magnificently creative and experimental cook.  She exposed her children to the wonder of the Congo's diverse culinary cultures well as the traditions of their Flemish heritage.  For Dany, the Congo opened his eyes and palate to exotic flavors and specialties: "Moambe", a chicken stew served in palm pulp, local river fish poached in casaba leaves, Portuguese fish stew and more unusual market foods such as crocodile tail, monkey stew, and fried caterpillars seasoned with "Pili Pili" peppers which not only added flavor to the dish but made it easier to swallow.

After completing secondary school Dany and his family returned to Belgium.  Now full of inspiration he began his studies of the culinary arts at the CERIA in Brussels.  Upon graduation Dany embarked on his travel adventures to discover what the world was eating.

In 1979 Dany immigrated to Canada, working in Montreal and finally settling out west in Calgary.  Recognized immediately as an important culinary force he became Chef and partner in many successful restaurants.  These establishments, styled after small European bistros and cafes, include Divino, Cilantro, Mescalero, Teatro, The Ranche in Fish Creek Park and Wild Sage Cafe.  Dany was an inventive influence in the movement that put Calgary on the international culinary stage during the 1988 Winter Olympics.

 In an effort to expand both his art and inspiration Dany moved, with his wife and children, to Todos Santos, Baja California Sur, Mexico.  Recently proclaimed one of Mexico's historical "Magic Towns", this eclectic community is a regional cornucopia and Mecca for artisans.  Here, in 2002, Dany was invited to become Executive Chef and culinary cornerstone for John Stewart's Hotel California.

 Dany is considered a pioneer by many, a teacher by others and a true visionary by all.  He is committed to using locally grown produce whenever possible and works closely with the growers to ensure the best quality and guarantee supplies of speciality produce such as white eggplant, artichokes and sorrel.  Dany continually searches for sustainable wild crafting to add taste and intrigue to his blackboard specials- wild honey, cactus fruit, watercress, wild plums, wild oregano, and thyme.

 He also relies heavily on the influence of his travels, constantly working to fuse the cuisines of different cultures in every inspirational recipe.

He believes in passing on his knowledge - over the years instructing countless eager students and talking with seemingly every customer taking solace in the oasis that is the Hotel California Coronela restaurant and SantoVino.

 Dany brings with him Citlalli Cano, a trusted friend and chef from Mexico City & Cabo.  She will be in the kitchen with him and word had it that she will also be making Mexican Cempasuchitl paper flowers for our alter!

 There will be a 5pm and an 8pm seating, as usual. Pay heed to which you are reserving your seat/s for.
