Whole Hog Butchery Class
Join the Rose's MM & SS staff for our hands on pork butchery class. A total of six people will work together to break down a half of a hog. Together we'll separate the pig in to primals and cut each piece in to its respective cuts. We'll go over how to utilize and cook each piece of the animal just like we do in the shop.
Some of the techniques covered will be:
Fabricating the shoulder, and leg
Removing spareribs and curing bellies
Proper grinding technique
Whole muscle curing
Simple sausage making
Participants will take home approximately 10 pounds of meat including chops, roasts, grind and partially cured meats. We'll also throw in some pork stock so you get the full whole animal utilization experience at home.
Gift Tickets: There are two options to give this class as a gift:
#1)Purchase a date that you would like your gift-ee to attend and do it under their name.
#2)Purchase the June 1st date ticket as a open-ended ticket to the class. The June 1st date is not an actual class date. If you purchase this date, the person that you give this as a gift to will have to call Brown Paper Tickets and switch the ticket to a date that works for them. We hold 2-3 classes per month and post two months worth at a time. Please note: Tickets for this class MUST be Redeemed by June 1,2017 or they will be forfeited.
Important! Cancellation Policy: Cancellations received at least 48 hours before start of class will receive a full a full refund. Cancellations received after the 48 hour period will receive a 50 percent refund. Please contact Rose's directly to cancel after the 48 hour cut-off.
