The Book of Bread: Discussion and Tasting
Fill up on bread with Samuel Fromartz, author of In Search of the Perfect Loaf: A Home Baker's Odyssey and Mike Zakowski, solo baker and competitor in the global baking competition Coupe Du Monde de la Boulangerie in a discussion on the craft of handmade and wood-fired bread, rare and ancient grains, and the elite world of competitive baking. Get a sneak peak of the new film "Bread and Baker," featuring Mike, taste some of his excellent breads, and get your book signed by Sam.

Samuel Fromartz is a veteran journalist who focuses on the intersection of the food, farming and the environment. He is a co-founder and Editor-in-Chief of the Food & Environment Reporting Network. In Search of the Perfect Loaf: A Home Baker's Odyssey (VIking 2014) is his second book, recounting a personal obsession with craft baking.

He began his career at Reuters news agency in the mid-1980s, working as a correspondent in Washington and as deputy editor for the Reuters Business Report in New York. Since leaving the news agency, his articles have appeared in Inc., Fortune, Business Week, The New York Times, The Washington Post, and The Nation, among other publications. He is the author of Organic Inc.: Natural Foods and How They Grew (Harcourt, 2006) about the evolution of the organic foods industry. Beginning in the late 1990s, he took up home bread baking, eventually working with artisans in the US and Europe. In 2011, he helped launch FERN, which has grown quickly to become a journalistic presence in the world of food and agriculture reporting. He lives in Washington, D.C., with his wife and daughter, where he bakes all his family's bread. He blogs at ChewsWise and can be found on twitter @fromartz.

Mike Zakowski is a graduate of the Culinary Arts program at Kendall College in Chicago, Illinois. When he owned Kraftsmen Baking in Houston, Texas, he was named Best Baker in Houston and won the Best Bread award for his pain biologique during the bakery's first year of operation. He was the Operations Manager at Artisan Bakers in Sonoma, California for 5 years and currently owns his own bakery, [the bejkr], and markets his creations at local farmers markets in Sonoma County, CA.. Mike is a member of Bread Bakers Guild Team USA and competed at the 2010 Louis Lesaffre Cup and the 2012 Coupe du Monde de la Boulangerie in the Baguette & Specialty Breads category. He will compete as an individual representing USA in the Masters de la Boulangerie in the Bread category.
